Information

In the fall, snow geese were hunted for the winter food supply. Come spring, Canada geese were hunted and prepared traditionally, either by smoking or salting the goose meat. Moose meat was smoked, pounded and dried as well. The grease from the boiled moose meat was collected and frozen as a condiment for the meat.
